White Pepper
White pepper (Piper nigrum) is a flowering vine in the family Piperaceae. Black and white peppercorns are both the fruit of the pepper plant, but they are processed differently. Black peppercorns are picked when almost ripe and sun-dried, turning the outer layer black. White pepper is prepared by having the outer layer removed before or after drying, leaving only the inner seed.
White pepper has a different flavour from black pepper; it lacks of certain compounds present in the outer layer of the drupe. White pepper has hotter taste in comparison to black pepper. It is well known for it sharp bite and used to add flavour to marinade, chinese soup, stir fry and poultry. It is vary in flavor and heat component than black pepper.
